Abstract

The liq. is run into a premould of which the shape need have no particulate relationship to that of the final cheese. The premould cavity must be profiled to demould its precheese curds contents easily by gravity into a final mould of definitive form to produce a desired shape of cheese. A final mould is placed, mouth-to-mouth, on top of a charged premould. The pair of moulds are together inverted so as to transfer the contents of the premould into the final mould. A set of premoulds are pref. combined on a backing and used to transfer simultaneously a set of precheese curds into a corresp. set of final moulds. The premould cavity pref. takes the form of a solid of revolution, e.g. paraboloid.
