Abstract

Procédé pour la réalisation d'articles de boulangerie, de pâtisserie et/ou de biscuiterie à base de pâte à choux. Selon l'invention, ce procédé est caractérisé en ce que l'on mélange des débris de biscuits antérieurement fabriques à de l'eau tout en brassant énergiquement le tout, après quoi, à la pâte ainsi obtenue, on ajoute les oeufs de façon usuelle tout en continuant à brasser, puis les articles sont façonnés et cuits dans un four.
