Abstract

La présente invention est relative à un procédé pour la préparation d'oligosaccharides. Ce procédé est caractérisé en ce que l'on élimine pratiquement tous les olisosaccharides en dessous d'un poids moléculaire minimum désiré, à partir d'un échantillon contenant un mélange d'oligosaccharides, en traitant simultanément ledit échantillon par une levure et une amylase. Application d'oligosaccharides ainsi obtenus comme substrats pour le dosage des amylases.
