Abstract

La présente invention est relative à un procédé pour la préparation d'oligosaccharides. Ce procédé est caractérisé en ce que l'on élimine pratiquement tous les olisosaccharides en dessous d'un poids moléculaire minimum désiré, à partir d'un échantillon contenant un mélange d'oligosaccharides, en traitant simultanément ledit échantillon par une levure et une amylase. Application d'oligosaccharides ainsi obtenus comme substrats pour le dosage des amylases.The present invention relates to a process for the preparation of oligosaccharides.
