Abstract

Flat round rice cakes, (Banh-Trang), are mfd. in a machine in which a mixt. of rice flour and water is heated; the paste obtd. is passed between rollers and the sheet is cut to the desired dimensions and dried. Mixing is effected in tank with its stirrer and heating means. When the mixt. has attained satisfactory properties, it is taken by the dosing pump via pipe to the cooking and mixing extruder. The temp. is brought up to 99 degrees C by heaters arranged around the cylinder. The latter has a compression chamber at one end with a slit through which the paste is extruded. The extruded strip then passes between the rollers of a double two-high rolling mill where it is rolled into a sheet. A rotating cutter divides the sheet into the desired shapes and the cakes fall onto the conveyor belt to be carried through the insulated drying tunnel. This is heated by infra-red heating lamps which maintain the temp. between 40 and 70 degrees C. The prod. has exactly the same properties and the same appearance as those made by hand but they have a regular thickness and the rate of prodn. is greatly enhanced.
