Abstract

The machine comprises a chain conveyor with carriers into which the prod. is loaded. The conveyor carries the prod. successively through a number of processing stations. The stations are a hot water washing tank; a cooking water tank at 90-95 degrees C; a steam cooking/washing chamber filled with water vapour at 95 degrees-98 degrees C., a hot air chamber through which is blown a current of air at 80 degrees C; a progressive cooling tunnel via which the prod. is conveyed to a discharging station at about 50 degrees C. A single operator can load and unload the prod. conveyor. The fish remains unbroken and retains and attractive, fresh appearance. Subcutaneous fat is eliminated from the flesh of the fish by osmosis.
