Abstract

La machine à mouler le jambon sous vide comporte un dispositif d'alimentation en viande et un mandrin de remplissage des moules. Le dispositif d'alimentation est une vis sans fin à la base de laquelle on crée un vide pour éliminer les bulles incluses dans la viande Le mandrin épouse la forme intérieure d'un moule et le vide est fait entre le mandrin et le moule. Au fur et à mesure que le moule se remplit, il descend par rapport au mandrin. La machine permet une automation du moulage du jambon.
