Abstract

Process comprises wrapping the prod. in a gas impermeable plastic which is then evacuated. A mixt. of O2, CO2 and inert gas is then introduced after which the wrapping is sealed. The gas mixt. contains 25-48 vol.% O2 with a CO2 content at most equal to the O2 content. Process is used partic. for storing meat, esp. red meat. It avoids freezing (0-4 degrees C), which alters the meat structure.
