Abstract

Products for human and animal consumption having an enriched protein content are prepared from non-cellulosic edible substrates. The substrate is finely divided and treated with an agent to aid culture of a mould, the mixt. is agglomerated and seeded with a non-pathogenic, non-toxic aerobic mould, the agglomerates are placed in a reactor fitted with a means for continuous forced aeration, the agglomerates are incubated, and after incubation the agglomerate, rich in fungal protein, is recovered. Typically the edible substrate is manioc and the mould is Aspergillus niger. In an example roots of manioc were cooked in steam at 110 degrees C for 15 mins. and ground to a flour. Monopotassium phosphate, ammonium sulphate, and urea were added and the prod. agglomerated. It was seeded with Aspergillus niger and aerated. After 30 hrs. the prod. contained 17% protein and 26% sugar.
