Abstract

PURPOSE: To prepare the titled substance, by treating an aqueous solution of glucose free from nutrient sources necessary for proliferation of microorganisms, with treated mold having glucoseoxidase activity and belonging to Aspergillus genus, Penicillium genus, etc., at ≤ pH3.
CONSTITUTION: Molds having glucoseoxidase activity, e.g. Aspergillus niger, Penicillium chrysogenum, Rhizopus Chinensis Saito, Mucor racemosus Fresenius, etc. are cultured by conventional method to obtain treated microbial cells. The treated cells are added to an aqueous solution of glucose free from nutrient source necessary for the proliferation of microbial cells, and maintained at ≤pH3 to effect the dehydrogenation reaction of glucose. The produced glucono delta lactone is crystallized by removing the cells by filtration, etc., and concentrating the reaction liquid.
