Abstract

The vat comprises a variable level float, for making wine, and storage allowing permanent discharge of the wine without introduction of air. The system suppresses the need for a second vat. The cylinder body has a sloping bottom upper and lower reinforcing profiles, and discharge opening. The removable cover comprises a flue and a circular reinforcement with a toroidal seal and bolts for holding the components together. When fermentation is complete, dismounting of the cover allows introduction of the float onto the liquid.
