Abstract

Prepn. of invert sugar as a purified aq. soln. or purified syrup, starting from fruit juices, esp. grape-juice, comprises (1) passing the clarified juice through a cation exchanger; (2) passing the acid soln. coming out through a medium basicity anion exchanger; (3) passing soln. obtd. through a strongly basic anion exchanger (4) passing soln. obtd. through a cation exchanger and (5) sepg. and recovering the tartaric acid present in extracts from regeneration of the extractors, as a salt esp. the Ca salt. The purified juice obtd. may be conc. to syrup consistency. The invert sugar obtd. is used for sugaring food and drinks, including pharmaceutical prods. and esp, wine. Salts obtd. in concn. of cation exchanger regeneration extracts e.g. KCl, CaCl2, and MgCl2, are pref. dried and used as fertilisers. Invert sugar is a cheap replacement for saccharose in sugaring wine and does not represent a foreign additive. Process allows utilisation of excess or lower quality grape-juice not suitable for wine-making.
