Abstract

Fruit pulps, pref. banana, having a high iron salt content are preserved by pressing in a mould to form a cake which is packed in a gas-impervious container which is then deep-frozen at -40 degrees C to -50 degrees C, and sealing, the whole process being performed in a O2-free atmosphere, e.g. helium. The simple, cheap process allows an extended and flawless preservation of the pulp without oxidn. and without chemical additives to ensure the stability of the original pulp protein.
