Abstract
Sulphur dioxide is injected into fermentation grape musts, wine or other fruit or vegetable extracts, by direct metering of liquid SO2 and injection into the produce stream. Liquid SO2 is stored in a cylinder and flows through metering a pump and to a jet. The SO2 flashes after passing through the jet and mixes in the liquid flow. This flow is measured in a meter and the setting of the pump is controlled by a proportionator so that a constant ratio of SO2 to liquid is maintained. The pump can be of piston or membrane type. The jet is kept shut by a spring loaded device but which the pressure from the pump pushes open, esp. during the pumping stroke of the pump. The meter can be a rotary piston with counter or an inductive type quantity meter. Used for treating fruit and vegetable extracts, esp. grape musts for wine prodn. with SO2. In conventional processes the pressure of the SO2 is set on a monometer and the flow manually controlled through a valve. The stored SO2 is first evaporated in an expansion chamber and the flow controlled as a gas. The pump has to be determined and the valve setting estimated from the liquid flow. In the present process, the SO2 is metered accurately as a liquid and its flow ratioed to the liquid flow. This gives precise and accurate dosing and avoids the tendency for over and under dosing inherent in the scheme outlined above.
