Abstract

A soln. contg. galactose for drinks is prepd. by fermenting a soln. contg. lactose (lactoserum by-prod. of cheese prodn. with a mutant non-pathogenic, prototrophic microorganism (I) contg. beta-galactosidase and having gal - character, followed by sepn. of the microorganisms. (I) is a mutant haploid (diploidised) derived from a culture of Kluyveromyces fragilis or Escherichia coli, or Enterobacteriaceae lactobacteriaceae. This provides a commercial use for lactoserum which can pollute streams and gives dietetic milk wholly assimilable by the elderly.
