Abstract
Packaging process for freshly roasted coffee in which the coffee is first degassed in an atmosphere of inert gas, pref. CO2 for 24-48 hours, then filled into packets made of impermeable material such as composite sheet providing a lining of plastic or aluminium foil. Filled, open packets are subjected to a partial vacuum of about 50-90% after which a preservative gas such as nitrogen or argon is injected into the packets, pref. at sub-atmospheric pressure and the packets are heat-sealed. Loss of aroma from the freshly roasted coffee is greatly delayed e.g. coffee packaged by the new process is as fresh after 85 days in packet as coffee which has been in packet only 8 days after packaging by previous processes.
