Abstract

Plant consists of two concentric towers; an exchanger formed by a tubular coil, is immersed in the central tower below the grape grid. The latter is situated below the central evacuation hopper. The coil is fed with cooling water by a pump; the water heated by the fermenting mass returns into a tank where it is re-cooled to the desired temp. by the expansion coil of a refrigerator. The cooler eliminates the need for circulating the wine and enables the temp. of the mass to be maintained, night and day, at 25-28 degrees C; this is the optimum temp. range for retaining all the aroma of the wine.
