Abstract

Water-soluble carotenord, compsns comprising beta-carotene violaxanthine, echinenone, torularhodine, capsacanthine, zeaxanthine, beta-apo-8'-carotenal, isozeaxanthme dimethyl ether, canthaxanthine or ethyl beta-apo-8'-carotenoate which are solubilized by solvents for carotenoids which are water miscible, the composns pref contg emulsifiers, anitoxidants, preservatives, complexing agents and water. The compsns increase the yellow colour of the flesh and egg yolk from poultry fed with the compsns; the compsns increase the growth rate of poultry and increase their resistance to coacidiosis. Also used for colouring human foodstuffs eg. sauces.
