Abstract

French loaves require that the roll of dough be stretched by clamps which grip the ends and move outwards. A pair of endless chains are arranged at each end, one above and the other below the plane of the dough. The pairs rotate in opposite directions and are carried on side brackets rollers. One roller on the lower chain fits between two spaced rollers on the upper chain and grips the dough at each end.
