Abstract

The title process comprises treating viable microorganisms, pref. of Streptomyces germs, esp. ATCC 21175 or 21176, which contain intracellular glucose isomerase with a toxic agent (e.g. ethyleneimine, UV light or N-methyl-N1-nitro-N-nitrosoguanidine) to destroy >=95% pref. >=99% of the microorganisms, culturing the treated viable microorganisms to promote growth, and incorporating the cellular material into a glucose soln. Conditions are maintained such that a portion of the glucose is converted to fructose.
