Abstract
In a culture of micro-organisms of the genus Streptomyces, able to assimilate xylane under formation of glucose-isomerase, the organism is cultured in stages in aqueous nutrient medium under submerged aerobic conditions whereby in at least one initial stage a small amount of water-dispersible non-nutrient material is incorporated, which causes fibrous growth of the micro-organism. The non- nutrient material is pref. used in the first two growth stages of the culturing process. The micro-organism is pref. Streptomyces wedmorensis ATCC 21175 or Strep. ATCC 21176. The non-nutrients used are agar at 0.005-0.25% pref. 0.2% carboxymethylcellulose at 0.1-2% or diatomaceous earth at ca 4%. The glucose-isomerase produced is used for the isomerisation of glucose to fructose in syrups used in the foodstuff industry. The additional non-nutrient material increases the growth of the micro-organism and the yield of glucose-isomerase.
