Abstract
1,274,640. Enzymatic conversion of glucose to fructose. STANDARD BRANDS Inc. 9 April, 1970, No. 16847/70. Heading C2C. [Also in Divisions C3 and C6] A glucose-containing syrup is treated with glucose isomerase at pH 6À5 and 70‹ C. for 72 hours to produce a syrup comprising 38% fructose and 43% glucose (based on solids present). The glucose isomerase is produced by fermentation of a microorganism of the genus Streptomyces. The culture development of the microorganism is carried out in stages in an aqueous nutrient medium under submerged aerobic conditions, there being present in at least one of the initial growth stages an aqueous dispersible non-nutritive material to induce growth of the microorganism in filamentous form, e.g. agar, carboxymethylcellulose, diatomaceous earth.
