Abstract

Clams, oysters and other edible, marine molluscs are preserved by flash freezing in a few minutes down to >=50 degrees C below zero, e.g. by contact with liquid N2 and then transferring to refrigerated storage at normal, commercial temp. around -25 degrees C. The rapid freezing kills the mollusc before it can open and lose its sea water, and this retained frozen water enhances the keeping props. of the food.
