Abstract

Mfe. of cheese by moulding and pressing in a compression moulding vessel subdivided into a series of chambers with movable bottom, enabling the cheese to be pressed in such a way that a closure plate is placed on the upper part of the chamber and the bottom plate moved upwardly relatively thereto, the special feature of this arrangement being that the walls of the compression moulding vessel are higher than the upper parts of the individual chambers, and the mixture of cheese granules and whey is charged to the moulding vessel by a distributor which moves forwards and backwards over the vessel, the upper layer of cheese granules and whey being maintained in motion for such time as will ensure that the mass of cheese is distributed sufficiently uniformly in the various chambers.
