Abstract

Vapourised aromatic oils obtd. from wood by burning or grinding are introduced into air in an aromatising chamber, and the air is then passed over the food product to be aromatised so that the oils condense on the product surface and flavour it. Before passing to the aromatising chamber, fresh air is preheated pref. by gas burners and/or electrical heaters in a preheating chamber, and pref. a proportion of the aromatised air is recirculated to the preheating chamber from the aromatising chamber. The relative quantities of fresh and aromatised air passing to the preheating chamber is controlled by a valve. Preheating of the air prevents the oils from condensing out before the air reaches the food product.
