Abstract

Appots. comprises a sample holder formed of two identical halves; each of these is made from two portions which can pivot around an axis. The two halves have an internal conical enlargement so that the elongation of the sample is not hindered by friction; perforations in the halves maintain the sample in position during extension. Two pistons compress the sample before test and while at rest. For testing, the sample holder is held at its lower end by a grip while the upper end is adjusted in a moving head driven by a screwed rod on two columns. The elongation at the breaking point can be read off a centimetre scale. The elongation can thus be determined in a simple manner which excludes subjective errors and assures good reproducibility. The test gives a good indication of the quality of wheat gluten and wheat flour; it is useful in connection with the improvement of wheats, the selling of wheat and flour, the control of quality in the mill and in research.
