Abstract

Process is notably applicable to apples of the 'Golden' type and the slices are cooked and sterilized along a prodn. line. After weighing cold into a container, the fruit is immersed in syrup and the container is placed on a slow-moving conveyor over a row of gas burners, these bring the temp. up to 102-103 degrees C. The fruit is next separated from the syrup and packed into its selling unit, the syrup is then added back to fill the recipient completely. After application of a cover, the unit passes through a sterilizer, heated with hot air at 90 degrees C, for 15-20 mins. The prod. is cooled and packed.
