Abstract

Creams for the mfe. of butter are normalised by concentrating the hot cream, separating the skimmed milk; a certain quantity of water is added to the cream obtd. in order to normalise the fat content. The cream is then pasteurized by heating and degassed, when it is ready for subsequent treatment after maturing. Any basic neutralisation of the acidity of the cream is suppressed and this improves the quality and keeping properties of the butter produced. Further, the particles of casein precipitated during heating are eliminated and this prevents the butter from becoming rancid.
