Abstract

Biological maturation of cream is automatically controlled by regulating the pH and temp. of the cream. When acidity attains required pH value further acid formation is retarded by automatically cooling to a predetermined temp. When this temp. is reached cooling ceases. Signal from pH meter is stored so that a predetermined time lag occurs before cooling begins. During this period cream is mixed and cooling only starts if pH remains constant during this period. Process is used in butter manufacture. Errors due to pH variation in different parts of the cream are eliminated.
