Abstract

The malt extract which is fermented to beer, comprises an aqs. soln. prepd. from a practically dry powder contg. the soluble materials of malt and opt. the appropriate adjuvants, e.g. fermentable sugars. This dry powder, which can be stored until required or transported as desired, is obtained by lyophilising brewing wort which has pref. been impregnated with hops prior to the dessication. The use of this powder enables the concn. of the medium subjected to fermentation and thus the strength of the beer, to be controlled as desired.
