Claims (11)
1. Förfarande för framställning av ett natursaftkon-centrat av citrusfrukter, kännetecknat därav, 5 att man 1. extraherar fruktsaft frän frukt, varvid fruktsaf-ten innehäller en av finfördelat fast material bildad frukt-massadel och en serumdel; 2. leder saften tili en separationszon med inert at-10 mosfär, varvid den av finfördelat fast material bildade fruktmassadeIen separeras och tillvaratas, varvid en serumdel bildas, som innehäller 80-93 % vatten och 7-20 % föreningar, som inte innehäller vatten, varvid delen av före-ningar, som inte innehäller vatten innehäller icke flyktiga 15 föreningar och flyktiga föreningar? 3. leder serumdelen tili en koncentreringszon, väri en koncentrerad fruktsaft bildas i en inert atmosfär, varvid koncentreringszonen är en fryskoncentreringszon, väri väsentligen rena iskristaller bildas och tillvaratas och/ 20 eller en sublimationskoncentreringszon, väri västentligen ren vattenänga tillvaratas; och 4. det koncentrerade fruktsaftserumet frän skede 3 och 30-100 % av den i skede 2 separerade, av finfördelat fast material bildade fruktmassan kombineras; 25 varvid ett naturfruktsaftkoncentrat bildas, som inne häller väsentligen 100 % av de icke flyktiga föreningarna och ätminstone 65 % av de flyktiga föreningarna, som den i skede 1 extraherade fruktsaften urpsprungligen innehöll; varvid ätminstone 0,1 % av de flyktiga föreningarna är 30 etylbutyrat och förhällandet etylbutyrat tili limonen är i omrädet 0,0015:1 - 0,6:1, varvid mängderna och förhällan-dena av dessa flyktiga föreningar bestäms medelst gaskro-matografisk analys av de flyktiga ämnena som avgivits frän citrusfruktsaftprovet tili gasutrymmet dä provets tempera-35 tur är 40°C.
2. Förfarande enligt patentkravet 1, kännetecknat därav, att koncentreringszonen är en frys- 39 Λ * 69394 koncentreringszon, varvid den koncentrerade fruktsaften frAn skede 3 innehAller 30-60 % föreningar, som inte innehAller vatten och 40-70 % vatten.

Förfarande enligt patentkravet 2, k ä n n e -5 tecknat därav, att den koncentrerade fruktsaften frAn skede 3 pastöriseras genom upphettning i ett slutet system till temperaturen 80-95°C för 3-15 sekunder, varvid närvarande mikroorganismer och enzymer väsentligen inakti-veras, och den pastöriserade, koncentrerade fruktsaften 10 kombineras med 30-100 % av den i skede 2 separerade frukt-massan, varvid ett citrusfruktsaftkoncentrat fAs, som innehAller 5-19 % (V/V), fördelaktigt 6-12 % (V/V) fruktmassa.
4. Förfarande enligt patentkravet 2, kanne-tecknat därav, att fruktsaften frAn skede 1 före 15 separationen i skede 2, pastöriseras genom upphettning i ett slutet system till temperaturen 80-95°C för 3-15 sekunder, varvid mikroorganismer och enzymer väsentligen inakti-veras, och den koncentrerade fruktsaften frAn skede 3 kombineras med 30-100 % av den i skede 2 separerade fruktmas- 20 san, varvid ett citrusfruktsaftkoncentrat fAs, som innehAl-ler 5-19 % (V/V), fördelaktigt 6-12 % (V/V) fruktmassa.
5. Förfarande enligt patentkravet 3 eller 4, k ä n -netecknat därav, att det finfördelade fasta mate-rialet som separerats i skede 2 pastöriseras genom upphett- 25 ning i ett slutet system till temperaturen 80-95°C för 3-15 sekunder.
6. Förfarande enligt patentkravet 1, k ä n netecknat därav, att den i skede 3 koncentrerade fruktsaften kombineras med 30-100 % av den i skede 2 separerade 30 fruktmassan och den kombinerade koncentrerade fruktsaften pastöriseras sedan Anyo genom upphettning till temperaturen 80-95°C för 3-15 sekunder i ett slutet system, varvid närvarande mikroorganismer och enzymer väsentligen inakti-veras. 35
