CONSISTE EN ELIMINAR LA MAYOR PARTE DE LOS IONES CALCIO DE LAS PROTEINAS DE LA LECHE Y EN HACER REACCIONAR DESPUES LAS PROTEINAS ASI TRATADAS, CON UNA FUENTE DE IONES ALUMINIO TRIVALENTES. LOS CONCENTRADOS PROTEICOS PROCEDENTES DEL LACTOSUERO PUEDEN OBTENERSE POR CUALQUIER PROCEDIMIENTO DE CONCENTRACION, TAL COMO LA EVAPORACION O LA ULTRAFILTRACION, HASTA UN CONTENIDO EN ESTRACTO SECO SUPERIOR A UN 20% EN PESO. EL FRACCIONAMIENTO DE ESTOS CONCENTRADOS PROTEICOS POR CROMATOGRAFIA DE EXCLUSION Y DE CAMBIO DE IONES, PERMITE OBTENER LAS PROTEINAS CORRESPONDIENTES.
