Abstract

Un procedimiento para gelatinizar y dispersar almidón, que comprende poner en contacto una suspensión acuosa de almidón y un disolvente del almidón, y comunicarles una fuerza de cizallamiento, para llevar a efecto, de manera sustancialmente instantánea, la gelatinización y dispersión del almidón y, seguidamente, retirar de la acción de la fuerza de cizallamiento, una pasta de almidón que tiene una viscosidad que oscila entre aproximadamente 1,0 y aproximadamente 2,0 veces la viscosidad, estable al cizallamiento, de la pasta.
