Abstract

1. Un método de preparación de una composición de crema artificial constituida por una dispersión acuosa de una grasa comestible, esencialmente exenta de proteínas de la leche y que contiene una combinación de lecitina con un emulgente lipofilo iónico y un emulgente hidrófilo no iónico constituido por un condensado de polioxialquileno, cuyo procedimiento comprende: a) dispersar lecitina y un emulsionante lipófilo iónico en grasa fundida; b) dispersar el condensador de polioxialquileno en la fase acuosa con gomas y agentes espesantes; c) combinar el producto de la etapa a) con el de la etapa b), homogeneizar y posteurizar por acción del calor el producto de las dos fases.
