Abstract

1500427 Synthetic cream FUJI OIL CO Ltd 24 April 1975 17090/75 Heading A2B [Also in Division C5] Synthetic cream comprises 28-60% fat or oil 40-72% milk, skim milk or water and either (a) 0.1 - 3.0%, based on wt, of fat or oil, of lecithin and 0.1 - 3.0% of a polyglycerol fatty acid ester, polyoxyethylene sorbitan fatty acid ester, sucrose fatty acid ester sorbitan fatty acid ester, malic acid monoglyceride or propylene glycol fatty acid ester or (b) 0.2 - 2.5% lecithin and 0.5 - 2.5% of a fatty acid monoglyceride. The mixture is emulsified and sterilised by direct heating with steam e.g. at 135 - 150‹C for 1 - 5 seconds, resulting in a product which does not suffer plasticisation when whipped for 8 mins. at 150 r.p.m. The product may be used as a coffee whitener or cream topping.
