Abstract
Procedimiento para la preparación de aislados proteínicos de semillas de cártamo, caracterizado porque comprende los pasos de (a) prensar las semillas para separar el aceite y formar una torta de prensa; (b) extraer la torta de prensa con hexano a 20- 30ºC para separar el aceite residual; (c) separar la torta de prensa del hexano; (d) secar la torta de prensa a 20-30ºC; (e) aplicar un álcali acuoso a la torta de prensa a un pH de aproximadamente 8 a 10; (f) separar de la misma un jugo que contiene proteínas solubles; (g) acidificar el jugo a un pH de 6,0 para precipitar un aislado proteínico; (h) separar del mismo el aislado proteínico; e (i) lavar el aislado proteínico con agua a pH de 6,0 y secarlo.
