Abstract
A method of obtaining a relatively stable, dry and substantially non-denatured soy protein composition from a soy protein isolate, the method of which is characterized by intimately mixing a soy protein isolate with an aqueous solution of an edible salt to forming a liquid soy protein composition of which 10 to 50% by weight is formed by soy protein dissolved in a dissolved aqueous liquid phase of edible salt and drying the liquid soy protein composition under conditions such that a reconstitutable solid is formed with water to form a liquid protein composition that can be solidified by the action of heat.
