Abstract
A fermentation cabinet for the baking industry comprises a heat insulated enclosure for the loaves provided with a refrigeration cycle driven by a compressor 9, in order that fermentation should be delayed by cooling, and a heat source controlled by a timing device which may be used to promote fermentation after switching off the refrigerator. Air is induced by fan 7 to flow across the heat exchange surfaces of the evaporator 8 and the heating element 10, by which it is either heated or cooled, and then passed up the vertical channel 5 and through apertures 11 where is passes over the loaves supported on horizontal partitions 3 and down vertical channel 4. The timing device is arranged such that when supply contacts (1a) and (2c) (Fig. 3, not shown) are closed the refrigeration cycle operates and the heating circuit is open, and when open the heating circuit is closed. Thermostats (14) and (15) in the respective circuits ensure that the cabinet is kept at the desired temperature.
