Abstract

An evaporator, suitable for the crystallization of sugar from syrup by evaporation of water, is heated by an inner tube-nest 5 which is raised relative to the base of the evaporator and is contained in a compartment 6 from the top of which the boiling syrup, leaving the upper ends of the tubes, overflows into the lower zone 14 of the evaporator the syrup is then recirculated up through the lower extension 16 of compartment 6 into the heating tubes by means of impeller 17. The vapours pass through droplet-separator 22 to outlet conduit 21. Tube-nest 5 is supplied with heating vapour through inlet 7, excess vapour being discharged through outlet 8 and condensate through outlet 9. The walls 29 of nest 5 comprise insulating material. At the start, syrup is pumped into the evaporator through pipes 2 and 2a, but when the operational-level is reached, fresh syrup is supplied via pipe 2b and sprinkler 20. The product massecuite is discharged through outlet 3. Fig. 2 shows an evaporator wherein some of the syrup flowing out of the tops of the heating tubes is recirculated directly to the base of the tubes. The lower zone is provided with a heating jacket 23 and a heating coil 23'. Three evaporators may be connected in series (Fig. 8 - not shown).
