Abstract

A process for preparing a powdered vegetable extract (e.g. a tea or coffee powder) comprises spray-drying an aqueous vegetable extract by injecting said aqueous extract and a current of hot air into a drying chamber, screening the resultant powdered extract into at least one relatively coarse particle fraction and a relatively fine particle fraction, and feeding the relatively fine particles into the drying chamber in at least one current of steam or steam-containing gas (e.g. air, nitrogen or carbon dioxide) to agglomerate said relatively fine particles. the relatively fine particles may be ground and cooled before being fed into the drying chamber through one or more nozzles surrounding the hot air current. The drying chamber may have a cyclone separator for removing very fine particles from the chamber. These may be combined with the relatively fine particle fraction. The dried powdered extract may be separated into an oversize fraction, the desired fraction and the relatively fine particle fraction.
