Abstract

1,044,501. Drying milk. ETABLISSEMENTS LAGUILHARRE. Feb. 18, 1965 [Feb. 21, 1964], No. 7127/65. Heading A2D. A milkproduct powder is produced by subjecting a milk product concentrate, e.g., a separated milk concentrate, having a solids content greater than 45% and having a temperature above 45‹C., to spray-drying to produce a powder having a water content of 4.5 to 7%, and subjecting the powder thus obtained to a second drying process with hot air to reduce its water content to approximately 3.5%. The spray drying apparatus may utilize pressure nozzles, compressed-air nozzles or centrifugal discs for forming the spray. The second drying process may be effected in a compressed-air system supplied with hot air or on a drying table. The partially dried powder is preferably remoistened to approximately 8% water content, to agglomerate the particles, before the second drying process. Very fine particles may be separated from the final powder and fed back to an earlier stage in the process.
