Apparatus for preparing a fast-cooking rice product, comprising means for hydrating rice grains at a temperature below about 55º C to increase the moisture content to a level sufficient to allow subsequent gelatinization, means to partially gelatinize the hydrated rice by treatment with an aqueous medium at a temperature of at least about 55º C until at least the external surfaces of said rice grains are gelatinized, means to continue the gelatinization of the rice particles at a temperature of at least about 55º C while the rice grains are hydrated intermittently to avoid excessive gelatinization of the previously gelatinized portions and to gelatinize the remaining portions of the rice grains, means to cool the gelatinized rice grains and means to dry the cooled rice grains.
