Abstract

A heat exchanger (21) is placed towards the outlet of a secondary chamber arranged in the hood (3), downstream of the primary chamber (4) overhanging the cooker (2). Rows of nozzles (17, 18) serve to clean this exchanger by squirting onto it cleaning water, at the same time as other rows of nozzles (19, 20) squirt water onto the grille (12). The presence of the exchanger not only makes possible heat recovery, but also leads to better filtration, while ensuring simultaneous cleaning of the exchanger and of the grille.
