Abstract

Compositions for improvement of meat, e.g. pork and beef, in preventing the appearance of depigmentation, flaccidity and liquid exudation in the carcasses comprise ascorbic acid together with an adrenergic amine or serotonine or a salt thereof or a compound which causes formation of an adrenergic amine or serotonine in a living animal. The compositions are, for example, of ascorbic acid with adrenaline, tyrosine, dopa-(3-hydroxy tyrosine), dopamine-(b - (3,4 - dihydroxyphenyl)ethylamine], noradrenaline, 5-hydroxy tryptophan, tryptophan. The ratio of the adrenaline or serotonine constituent to ascorbic acid may be 0.002-0.1. Other antiautolytic compounds such as insulin, glucagon and p-amino benzoic acid may be included in the compositions, and, to delay deterioration of the meat by bacteria an antibiotic, e.g. oxytetracycline, chlortetracycline or patulin, may be included. Meat may be dusted with the composition or may be injected with or immersed in a solution of the composition. The composition may be administered to the animal orally before slaughter by way of the feed or drinking water or as units of the composition with a diluent, e.g. tablets of lactose containing 0.025-1 g. of the ascorbic acid alternatively, the composition in a pharmaceutical liquid diluent may be administered to the animal intravenously, preferably 1-5 hours before slaughter, or subcutaneously, preferably 1 hour before slaughter.
