Abstract

Magdalena vegetariana y procedimiento de fabricación correspondiente. La magdalena vegetariana elimina de su composición todos los ingredientes de origen animal, sustituyéndolos por otros de origen vegetal. El principal elemento de la invención es el sustitutivo del huevo, que consiste en una disolución en agua de almidón de mandioca, lecitina de soja y margarina de girasol o de maíz. Como resultado se obtiene un producto sin colesterol apto para ser consumido por personas con alergia alimentaria al huevo. El procedimiento de fabricación de la magdalena incluye unas etapas iniciales de molido del almidón de mandioca y su disolución en agua, calentamiento de la mezcla, adición de la margarina, enfriamiento de la mezcla y adición de la lecitina de soja.
