Abstract

Procedimiento para la obtención de pipas de girasol fritas con cáscara, que consiste en el calentamiento en sartén de aceite de oliva o aceite de girasol hasta alcanzar una temperatura que oscila entre 140º y 150ºC, se introducen las pipas de girasol y éstas se mantienen cubiertas por el aceite mediante la utilización de una pieza que empuja desde la parte superior a las pipas hacia el interior del aceite, manteniéndose la fritura durante un tiempo que oscila entre un minuto y un minuto y medio.
