Abstract

Procedimiento para extraer, mediante extracción con fluidos supercríticos, aromas de café libre de la fracción lipídica. El invento describe un método para obtener los aromas naturales del café tostado estable, libre de los componentes lipídicos, de uso en la aromatización de alimentos tales como productos de café y productos con aroma y sabor a café. El proceso se realiza en una sola etapa en la que inicialmente se extrae un aceite de café en el que están presentes los constituyentes del aroma y los compuestos antioxidantes y la fracción lipídica. Posteriormente se fracciona este aceite, obteniéndose una primera fracción conteniendo los componentes lipídicos y una segunda fracción conteniendo los componentes volátiles junto con los antioxidantes. La extracción se realiza en café tostado y molido utilizando como disolvente CO en condiciones supercríticas.
