Abstract

Process for obtaining fructose from grape juice. The process includes the following stages: the 1st stage in the process (Biotechnological stage) consists of converting the glucose to ethanol. In the 2nd stage the ethanol (and part of the water) is separated from the other components. In the 3rd stage the natural components which act as impurities in the fructose are retained. In subsequent stages the purified aqueous solution of fructose is concentrated in order to produce a "syrup", or dewatered to a "powder". Has application in the winemaking industry.
