Abstract
Monomeric grape (Vitis vinifera L.) anthocyanosides, free of aglycones, are subjected to a fermentation in acidic aqueous medium, carried out using microorganisms derived from an acclimatised strain of Aspergillus niger. Grape anthocyanoside polymers are thus obtained these are used for therapeutic purposes.
