Abstract
Process which consists in incorporating the pieces of meat 1 originating from any animal inside a refrigerated chamber 3, the pieces of meat being covered with salt 4, a salting stage 2 taking place so that, once this has been completed, they are introduced into a drying machine 5 where they will remain for a predetermined period. After this, the result obtained will be the food product of indefinite shelf-life.
